Healthy Chicken Chili
Malory, our newest team member, shared with us recently this recipe that her and her husband love to cook together.
Here is her review and recipe for Healthy Spicy Chicken Chili!
“It was a super easy dish to make that left us with plenty of leftovers for the week for to-go lunches and a quick dinner on those busy evenings.”
Healthy Spicy Chicken Chili Ingredients:
- 2 lbs chicken breast
- 1 red pepper, diced
- 1 green pepper, diced
- 1 yellow pepper, diced
- 1 sweet onion, diced
- 1 or 2 cloves of garlic depending on preference
- 1 tsp cumin
- 2 tsp oregano
- 28oz canned diced tomatoes
- 5.5 oz tomato paste
- 2 cup chicken broth
- 1 cup frozen sweet corn
- 2 bay leaves
Add these following ingredients per taste preference:
- 1 tsp red pepper flakes
- 1 tbsp chili powder
- ½ tsp cayenne pepper
Optional ingredients:
- Add shredded cheese and sour cream as desired
Directions:
You can dice the chicken breast into small cubes or cut into bigger pieces to shred later
Place all ingredients in crock pot and cook on low for 7-8 hours
